| Abstract: | Після сенсорного аналізу меланжу було виявлено, що показники продукту в замороженому стані не відрізнялися між собою не залежно від режиму та температури заморожування. Вміст вологи меланжу після розморожування в усіх групах майже на одному рівні і склав при 2-му та 4-му дослідних режимах 74,0 %, а 1-му і 3-му режимах, відповідно – 75,0 %, що на 1,3 % більше. |
| Description: | After sensory analysis of the melange, it was found that the indicators of the product in the frozen state did not differ from each other depending on the mode and freezing temperature. Moisture content of melange after thawing in all groups almost at the same level and amounted to the 2nd and In the 4th experimental modes 74.0%, and in the 1st and 3rd modes, respectively - 75.0%, which 1.3% more. |
