| Abstract: | Досліджено динаміку розвитку різних груп мікроорганізмів, хімічних змін жиру і плазми нових видів стерилізованого консервованого масла, його органолептичних характеристик та жирнокислотного складу в нерегульованих температурних умовах зберігання (t=4-25 °С). Встановлено, що в зазначених продуктах відсутня мікрофлора, а органолептичні, фізико-хімічні показники якості та жирнокислотний склад зберігаються протягом 6 місяців в межах допустимих норм. На основі проведених досліджень науково обґрунтовано терміни зберігання нових видів стерилізованого консервованого масла при різних температурних умовах. |
| Description: | The dynamics of development of different groups of microorganisms, chemical changes of fat and plasma of new types of sterilized canned butter, its organoleptic characteristics and fatty acid composition under unregulated storage temperature conditions (t = 4-25 ° C) have been investigated. It has been established that these products do not contain microflora, and organoleptic, physicochemical quality indicators and fatty acid composition are kept for 6 months within the allowed limits. On the basis of the researches the terms of storage of new types of sterilized canned butter under different temperature conditions are scientifically substantiated. |
