| Abstract: | Досліджено антиокиснювальний вплив рослинних добавок за прискорено-кінетичного зберігання молочного жиру. Прянощі, пряні трави, овочі є перспективними для використання у виробництві функціональних харчових продуктів. |
| Description: | It was studied the antioxidant activity of different plant additives in milk fat. Basil, parsley, dill, mix “khmeli-suneli”, coriander, garlic, carrot were used as biological additives. Dried dispergated species were added to milk fat and oxidized at 102°C with free access of oxygen. The concentrations of spices were 0,1 %. |
