| Abstract: | Дипломна робота бакалавра за спеціальністю 162 Біотехнологія та інженерія. – Білоцерківський національний аграрний університет, Біла Церква, 2026 рік. Дипломну роботу присвячено дослідженню впливу кількості дріжджової мікробіоти на формування технологічних показників кефіру та термін зберігання кисломолочного продукту. Для цього були поставлені завдання: проаналізувати дані літератури щодо вирішення проблем виробництва кефіру; провести аналіз мікробіоти кефіру та її роль в ферментативному процесі виробництва кефіру; дослідити кінетику ферментації суміші для кефіру з різним вмістом дріжджів; визначити вплив різної кількості дріжджів на технологічні показники експериментальних зразків кефіру за його зберігання. | Description: | Bachelor's thesis in specialty 162 Biotechnology and Engineering. – Bila Tserkva National Agrarian University, Bila Tserkva, 2026. The thesis is devoted to the study of the influence of the amount of yeast microbiota on the formation of technological indicators of kefir and the shelf life of a fermented milk product. For this purpose, the following tasks were set: to analyze the literature data on solving the problems of kefir production; to analyze the kefir microbiota and its role in the enzymatic process of kefir production; to study the kinetics of fermentation of a kefir mixture with different yeast contents; to determine the influence of different amounts of yeast on the technological indicators of experimental kefir samples during its storage. )""Y Z [ \.
