Abstract: Мета роботи: «Аналіз технології виробництва та переробки продукції свинарства в ТОВ «Земля Томилівська» Білоцерківського району Київської області». Предмет досліджень: елементи технології виробництва і переробки продукції свинарства в ТОВ «Земля Томилівська» Білоцерківського району Київської області». Об’єкт досліджень: технологія виробництва і переробки продукції свинарства. Зміст досліджень: 1. Загальна характеристика земельних ресурсів, рослинництва і тваринництва господарства (звіти і виробничо-фінансові плани). 2. Собівартість продукції і рівень рентабельності тваринництва. 3.Поголів’я свиней за віковими і виробничими групами. 4. Характеристика існуючої технології виробництва продукції тваринництва. 5. Забезпеченість тварин приміщеннями і кормами, мікроклімат. 6. Продуктивність тварин різного віку і виробничого призначення. 7. Управління технологічними процесами. 8. Машини і обладнання для переробки продукції тваринництва. 9. Економічна ефективність.
Description: The purpose of the research was to conduct a comprehensive analysis and scientific justification of the optimization of technological processes on a modern closed-cycle pig complex to increase economic efficiency and quality of the final product. The object of the study was: technological processes of growing and fattening pigs at the commercial farm of Steak-Agro LLC and further processing of pork at the meat processing enterprise of Business Meat Product LLC. Subject of research: animal productivity indicators, parameters of housing and feeding technology, quality of raw materials and finished meat products, economic efficiency of production. The work uses methods of comparative analysis, collection and systematization of primary production data of zootechnical accounting, and statistical processing of results. A detailed assessment of housing systems, microclimate, feeding rations and veterinary preventive measures was carried out. Key indicators were determined: average daily live weight gains, feed conversion, and livestock survival. Technological reserves were identified, in particular, in the area of optimizing ventilation and temperature regimes in livestock facilities, which affect feed consumption and stress levels in animals. The entire technological chain from raw material receipt to carcass production was analyzed. The efficiency of slaughter lines, deboning techniques, and refrigeration processing was assessed. Particular attention was paid to quality control and food safety systems (HACCP), analysis of such indicators as meat pH, color, moisture-binding capacity, and microbiological indicators.
