| Abstract: | Аналіз роботи підприємства та асортименту продукції показав можливі шляхи удосконалення технології за рахунок використання розмороженої сирної сировини в рецептурі плавлених сирів, що дозволить зменшити дозу солей-плавителів і відповідно час плавлення. В такий спосіб досягається економія електроенергії. При цьому немає потреби у модернізація обладнання підприємства і удосконалення не потребує додаткових капіталовкладень, що підтверджено техніко-економічними показниками роботи підприємства. |
| Description: | The analysis of the company's operation and product range showed possible ways to improve the technology due to the use of thawed cheese raw materials in the recipe of processed cheeses, which will allow reducing the dose of melting salts and, accordingly, the melting time. In this way, energy savings are achieved. At the same time, there is no need to modernize the company's equipment and the improvement does not require additional capital investments, which is confirmed by the technical and economic indicators of the company's work. |
