| Abstract: | Проведено дослідження м’яса на відповідність мікробіологічним показникам. У 2020 р досліджено 237 зразків: у 24 пробах відмічали перевищення КМАФАнМ, а у 53 – БГКП. Аналізуючи результати дослідження за 2021 р. відмічаємо, що у 6,7 % та 15,2 % відмічали збільшення кількості мезофільних аеробних та факультативно анаеробних мікроорганізмів та кількості бактерій групи кишкової палички відповідно. Salmonella spp. і Listeria monocytogenes – не виявляли. |
| Description: | The meat was tested for compliance with microbiological indicators. In 2020, 237 were investigated samples: in 24 samples there was an excess of KMAFAnM, and in 53 - BGKP. Analyzing the results of the study for 2021, we note that in 6.7% and 15.2%, an increase in the number of mesophilic aerobic and of facultatively anaerobic microorganisms and the number of Escherichia coli bacteria, respectively. Salmonella spp. and Listeria monocytogenes were not detected. |
