| Abstract: | За фотометричного визначення свіжості охолодженої та замороженої риби використовують м'ясо-водну витяжку з риби (співвідношення 1:5) у кількості 3,0-3,2 см3 та реактив Неслера у кількості 0,8-1,0 см3, центрифугують отриманий розчин упродовж 2-3 хв за 1000 об./хв. Надосадову рідину поміщають в кюветі у спектрофотометр і вимірюють інтенсивність забарвлення за довжини хвилі 455±5 нм (синій світофільтр) та встановлюють ступінь свіжості риби: свіжа риба – 0,149±0,016 Бел; риба сумнівної свіжості – 0,348±0,019 Бел; несвіжа риба – 0,895±0,024 Бел. |
| Description: | For photometric determination of the freshness of chilled and frozen fish, a meat-water extract from fish (ratio 1:5) in an amount of 3.0-3.2 cm3 and Nessler's reagent in an amount of 0.8-1.0 cm3 are used, the resulting solution is centrifuged for 2-3 min at 1000 rpm. The supernatant is placed in a cuvette in a spectrophotometer and the color intensity is measured at a wavelength of 455±5 nm (blue light filter) and the degree of freshness of the fish is established: fresh fish - 0.149±0.016 Bel; fish of questionable freshness - 0.348±0.019 Bel; stale fish - 0.895±0.024 Bel |
