| Abstract: | Одним із резервів у вирішенні проблеми дефіциту білка є максимальне залучення вторинних продуктів переробки сировини тваринного походження. Розроблено нові варені ковбасні вироби з білково-вуглеводною-мінеральною добавкою “Рекорд75”. Запропоновано використання кваліметричного методу оцінювання якості продукції. Доведено, що заміна частини м’ясної сировини комплексом тваринних білків і харчових волокон позитивно впливає на показники якості та органолептичні властивості готових варених ковбасних виробів. |
| Description: | Quality of cooked sausages with the additive “Record-75”. One of the reserves in solving the problem of protein deficiency is maximal involvement of the secondary products of animal origin raw materials. The new cooked sausages with the protein-carbohydrate-mineral additive “Record-75” have been developed. The use of qualimetric method of the estimation of products is offered. It is proved that the substitution of the part of meat materials by the complex of animal proteins and nutritional fibres has a positive effect on the indicators of quality and organoleptic characteristics of finished cooked sausages. |
